Piggy blinder: happiness is jazz and some porkers for cake maker

FOR South Korean cake maker extraordinaire Duckae Lim, opening her own shop was always her dream – whether filling it with more pigs than any other restaurant in London was a part of that dream is less clear.

Coming to London 15 years ago, Ms Lim first worked as a marketing manager before training as a pastry chef and honing her trade at Michelin-starred restaurants Yauatcha and Hakkasan for 10 years.

She then opened Daisy’s in Lever Street, Clerkenwell, just under five years ago and says she could not be happier working for herself and spending her days in the shop listening to jazz.

“Chet Baker is particularly good to listen to when it’s raining outside,” the pastry virtuoso – who prides herself on lower sugar delicacies – joked. And her best-selling items? Her famous celebration cakes Earl Grey chiffon and strawberry shortcake are very popular to order, while in the shop her matcha and black sesame slices fly off the shelves along with her miso peanut butter balls.

And why all the pigs? Quite simply, the notoriously camera-shy pudding professional has always been a fan of our porcine friends and has collected them all her life.

She said: “I just like them. Asian people follow the zodiac calendar and each year is represented by an animal, and my sister was born in the pig year and my grandma made a really beautiful pig door for her and my sister didn’t allow me to touch the pig door and I was really jealous and from that time I collect my own pigs. ”
